Vegan Mushroom Soup Recipe

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 cups mushrooms, sliced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon nutritional yeast
  • 1 cup coconut milk

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.
  2. Add the mushrooms and cook for an additional 5 minutes.
